Creamy with a hint of sweetness, a perfect side for dishes like fried chicken and ribs, ideal for occasions such as picnics, family lunches and potlucks, this coleslaw recipe makes use of raisins and pineapples to add a touch of sunshine to this wonderful side and act as a refreshing mouthful in between bites of oily or strongly-flavored foods. The traditional crunchy elements we know and love—carrots and shredded fresh cabbage—are present and full of vitamins and nutrients. Along with the fruit, it’s a lovely, cool and smooth side from all the whipping cream, but still remains pretty healthy in comparison. The added sugar can be adjusted according to your preference. It’s very portable as well and is very easy to prepare, so you can even make a family occasion out of prepping for a meal or picnic with your children. Definitely a must-try any day!

Ingredients:

  • 2 cups finely shredded cabbage
  • 1 cup thinly sliced carrots
  • 1/3 cup crushed pineapple, well-drained
  • ¼ cup raisins
  • ¼ cup white sugar

For dressing:

  • ¾ cup mayonnaise
  • ¼ cup thick whipping cream

Cooking Instructions:

  1. Put all ingredients in a bowl
  2. Mix well and chili before serving.
